Skillet Camping Recipe Favourites
Over the campfire, the camp stove, or in the RV kitchen, a cast iron skillet is truly a versatile tool. Here are two campsite favourites — one to start the day, one to finish it.
Campfire Breakfast Strata
Serves 4
Ingredients
- 4 cups cubed bread
- 2 cups milk
- 8 large eggs
- 2 cups shredded gouda
- ½ cup diced cooked bacon
- ½ cup browned Italian sausage
- 1 cup sautéed mushrooms, peppers & onion
- Salt and pepper
Directions
Whisk the milk and eggs together and season with salt and pepper. In another bowl combine the bread cubes and cheese — hold some cheese back for the top — then add the cooked meat and vegetables. Transfer to a seasoned 10" cast iron skillet. Pour the egg mixture over, pressing the bread down. Let it sit at least 30 minutes. Cover with foil and cook over the fire for 20–30 minutes, moving to indirect heat halfway through, until the cheese melts and the custard sets.
Campfire Peach Crisp
Fruit layer
- 8 cups sliced peaches
- 3 tbsp brown sugar
- ½ tsp each cinnamon, nutmeg and ginger
Topping
- 1 cup all-purpose flour
- ½ cup rolled oats
- ⅓ cup brown sugar
- 1 tsp cinnamon
- ½ tsp salt
- ½ cup melted butter
Directions
Mix the peaches with the brown sugar and spices and tip them into a 10" skillet. Combine the dry topping ingredients, then stir in the melted butter until crumbly. Spread it over the fruit, cover with foil, and cook over indirect heat for 15–25 minutes.
